Hummus Crackers (makes about 52 crackers)

Ingredients

180 grams (2 cups) Chick pea flour
1 tsp baking powder
1.5 tsp garlic salt or 1 tsp salt + 0.5 tsp garlic powder
50 grams (5.5 tbsp) sesame seeds 
0.5 tsp ground cumin
0.25 tsp ground black pepper
1.5 tbsp olive oil
2 tbsp tahini
3 tbsp lemon or lime juice
2-4 tbsp water

Pre-heat oven to 350 F.

Measure out and mix all the dry ingredients (chickpea flour, baking powder, garlic salt, cumin, black pepper, and sesame seeds)

Add olive oil and tahini. Mix until it’s crumbly (i.e. if you squeeze a bunch in your hand it sticks together but falls apart when you let go)

Add lemon/lime juice and enough water that your dough sticks together in one ball. Let it sit for 2 to 3 minutes.
Lay down a sheet of parchment paper ad roll out the dough until it’s about the thickness of a quarter (You might have to do this in batches).
Use a cookie cutter or a shot glass to cut out crackers.
Line a cookie sheet with parchment paper and lay your cut out crackers on it.
Bake for 15 minutes, rotating the cookie sheet 90 degrees halfway through.

Let your crackers rest on a rack until completely cool. Or start eating them. Just don’t pack them away until they’re cool.
